狂奔的蜜雪冰城,正在创建一个“蜜雪王国”

随着新茶饮市场的充分发展,竞争进入新阶段。

所有新茶饮品牌都意识到,仅卖奶茶,走不到宇宙尽头。随着新一轮的价格战今年上半年陆续打响,时至今日新茶饮头部三巨头已纷纷通过降价、推低价产品,压低整体产品线价格,放下身段,降低消费门槛。

原来,从2月开始喜茶就已官宣标准茶饮降到30元以下,并承诺年内不再推出29元以上的饮品类新品,现有产品在今年内绝不涨价。随后奈雪也宣布大幅降价,推出9~19元的“轻松系列”,并承诺将每月上新至少一款20元以下产品

乐乐茶同样也加入了降价的行列,并且官宣将推出20元以下产品,最低价位产品低至8元。大环境的影响,消费趋势的变化,都让进入成熟时期的各个新茶饮品牌压力巨大。尤其对于极致性价比的品牌来说,卡在中间进退两难,其中一个代表就是蜜雪冰城。

虽然目标客户群体不同,但当新生代消费者对于高质产品的性价比需求增大,中高端茶饮依托自身的规模效应与品牌效应,以及自身的供应链积累,打出价格优势,就会明显对其他性价比品牌产生一定挤压,第一梯队进一步下沉占领第二第三梯队的市场。

于是,一场轰轰烈烈的自救与不甘上演,再下沉一点,再扩张一点,蜜雪冰城的野心不止新茶饮,还有出海、咖啡、炸鸡和酒…只为厚积而勃发。

01          

炸鸡+奶茶,一起甜蜜蜜‘?

蜜雪冰城近期又有新动作。据多方消息,蜜雪冰城关联公司“雪王投资”入股了河南鸡装箱餐饮企业管理有限公司。简言之,蜜雪冰城开始投资起了“炸鸡”品牌。据了解,「鸡装箱」成立于2014年,产品主打“冷吃炸鸡”的概念,装修风格以集装箱式样式为特色。线上在天猫和抖音都有开店,线下店在全国仅有6家门店,5家位于河南省,1家位于浙江省。而在炸鸡之前,蜜雪冰城还进行了工商变更,新增酒类经营范围,看出来蜜雪冰城还在涉足除了酒饮外乃至更多餐饮细分领域。这并非蜜雪冰城首次出手。回顾之前,蜜雪冰城还涉足了咖啡领域。2020年,蜜雪冰城升级并重新推出了在2017年已出现在市场中的咖啡品牌「幸运咖」,并加速了拓店速度。在售价、选址等模式上,延续了其在奶茶届的打法:性价比+下沉市场。在下沉市场用奶茶吸引了小镇青年后,再度试图引入新品类咖啡完成对下沉市场的进一步培育养成。02          

做投资,产业协同色彩明显

事实上,近一年来,从茶饮咖啡品类拓展,到成立投资公司、自建农场提升自身硬实力,蜜雪冰城做了许多尝试,试图杀出新茶饮重围,为自身寻找新增量。2021年9月,蜜雪冰城正式成立雪王投资有限责任公司,做起了“VC”。随后一个月内便投出第一个天使轮——一家来自广东的新茶饮品牌「汇茶」。「汇茶」成立于2015年,总部位于东莞,专注于珍珠奶茶产品。据窄门数据,「汇茶」全国现有75家门店,覆盖16大城市,广东省与海南省占比最多。虽然同为新茶饮,但汇茶与蜜雪冰城的定位仍有差异。首先,从产品看,蜜雪冰城的产品以果茶和冰淇淋为主,汇茶则主打珍珠奶茶;其次,在产品定价,蜜雪冰城走的是极致性价比策略,产品单价在10元内,而汇茶的客单价在11-15元。如此情况下,蜜雪冰城试图通过投资与自营业务相关的「汇茶」,扩大定位和扩充品类,进一步向上占领中端市场,产业协同色彩明显。03          

扬帆出海,将新茶饮带到全世界

当国内市场的增量难寻,眼界瞄到海外扬帆出海便是一个新的选择。蜜雪冰城并不是第一个出海的新茶饮品牌,甚至在某种程度上,蜜雪冰城的出海开店并无太多优势。早在其之前就有了coco、鹿角巷、喜茶等品牌,还有霸王茶姬这样的专注海外的下沉品牌竞争。但是,蜜雪冰城仍然将出海这件事做的出色漂亮。其首战出海在2018 年,选取了自带下沉属性的越南市场开设海外首店,凭借供应链优势、价格优势和丰富的促销活动,使得蜜雪冰城在海外不断做大做强。官方数据显示, 2018到2021年,短短3年间,蜜雪冰城已在越南开店 200 多家,平均每个月就会有 5 家蜜雪冰城开业。目前,蜜雪冰城已进一步扩大东南亚市场,足迹遍布越南、印尼、新加坡、菲律宾、韩国、澳大利亚、马来西亚等七个国家。04          

做大做强,剑指扩充品类强化供应链

除了投资和出海,“雪王”近两年在其他方面也是动作频频。对于靠性价比和连锁加盟发展的蜜雪冰城,其门店目前已经接近2万家,门店数巨无霸的情况下,减少经营风险也成了重要课题之一。随着近期全国多地疫情散发局面,蜜雪冰城前段时间也推出了一系列扶持“锦囊”,包括减免加盟费、物料降价让利加盟商等。蜜雪冰城相关负责人介绍,此次降价的物料包括食材、包材、消耗品等多种物料,占比超门店物料的50%。今年3月,蜜雪冰城又发布了“减免加盟费”的内部扶持政策,面向2021年12月31日前门店在运营状态的所有加盟商减免1年加盟费,减免总额接近2亿元。减免费用外,要进一步做大做强,就不能再走以前的老路子发展,强化供应链和拓展新的品类是继续增长必须要走的一条路。去年1月,蜜雪冰城宣布在海南设立海南鲜易达供应链有限公司;7月,在海南成立大咖国际企业管理有限公司;8月,成立重庆雪王农业有限公司。三家公司分别指向供应链、企业管理和原材料生产。再配合之前的成立投资公司,引入资本运作的主导地位,雪王这波,在布局一盘大棋。05          

新茶饮市场:

野蛮生长到理性狂奔

透过一杯新茶饮,我们会看到一片更广袤的产业图谱。从一杯新茶饮的供应链构成上看,其背后的茶叶、水果、乳制品、糖、口感颗粒、水、设备、包材,再到终端对外推广运营,全流程涉及到了第一第二第三产业,农业、工业、现代服务业均有涉及。根据近期沙利文咨询发布的首份聚焦于新茶饮供应链领域的行业报告《中国新茶饮供应链白皮书,2022》数据,饮品门店占国内所有门店总数超过60%。遍布市场更下沉,覆盖更多样性的消费人群,并为更多城市带去就业机会。数据也显示,中国新茶饮的消费市场规模2021年首次突破了1000亿元,达到近1100亿元,预计到2025年这个行业的规模还会再次翻番。当行业规模和产业协同与“共同富裕”政策引领相结合,传统农业、制造业与现代服务业相融合,新茶饮作为新经济的代表还远未到固化的时候。换句话说,新茶饮仍然在高速增长,且无疑已进入了需要完善和提升供应链的阶段。以前那样的粗放式扩张在如今的环境已不再适用。新茶饮的红利期已经过去,目前进入的是在已有的存量上缓慢扩张,再以精细化运营获取更多利润。但另一方面,极致性价比的蜜雪冰城又不能简单粗暴地通过提价来增加利润,这只会加速流失手中的忠诚客户群体。同样的,面对来自前方头部梯队的价格、品质及刚刚完成搭建成体系的供应链优势,对于整个行业来说,供应链的进化过程其实才刚刚开始。看得出来,长久扎根于下沉市场的蜜雪冰城早已想突破新茶饮赛道的局限,在自身的主产业与副业下再深挖更多可能。眼下,“雪王”正试图通过投资协同产业、强化供应链、出海等多条路径,打出一套雪王特有的“组合拳”,至于究竟最终结果如何,让我们静静期待雪王的“厚积而勃发”。
